encoding arabic errors

Hello , it has been nearly 1 year that i use wordpress in my sites for books issues in arabic .

recently i moved to a dedicated server .

but when restoring the database from wordpress alot of words were messed up and it was giving 80 % correct arabic sentences and 20 % of caracteres that dont have any sence …

we were using the utf-8 , i also placed the “
“AddDefaultCharset utf-8” to my .htaccess

but still having the same probleme … does anyone know how i could fix this issue ? because i`m having this problem with 4 of my wordpress blog .
