The different server certainly has a different configuration and that is the reason.

Alright, you FAQ is a confusing as it doesn’t mention your hosting as the server.
As i am with hostgator they apparently support imagick https://www.hostgator.com/help/article/php-modules but they seem to not support webp unless oyu are on VPS.
Youd think the want smaller files sizes on their reseller accounts to lower server usage, but apparently they don’t offer a tech that is over 10 years old LOL!
Its time to move hosts, as this is the last straw with them for me. They are terrible.
@ozarc Unfortunately, it is unfortunate that the WebP format is still not supported on some servers. In this situation, you can use the PRO version, which offers the option of converting via a remote server.
Additionally, you will get the option to convert to AVIF format, so your website should be even lighter.
