Looks like things are getting converted to html entities for the apostrophe there.
Which label fields have you used for this? I’ve registered the same “Harmonies d’arômes” in the plural and singular fields at the very top and am not seeing the encoding version so far. So I’m wondering if it’s one of the other finer toothed comb label fields causing some issue.

Hmm.
For the admin side item, with https://ibb.co/mqg5dgy I wonder if that’s coming frm any translation files that are maybe getting used. I added a label to the “All Items” field without issue in the menu afterwards.
For the breadcrumb (https://ibb.co/fN1pDQx), I have to believe it’s something related to what’s piecing the breadcrumb navigation together. We don’t have any control over that part.
