Exclude a specific category or tag

Unless I am mistake, you can only exclude ‘all categories’ or ‘all tags’, right?
And not select specific ones like with the exclusion.
If so, is there. a workaround?

I have the same doubt. Found this: https://ww.wp.xz.cn/support/topic/feature-request-to-exclude-posts-from-taxonomies/ but can only exclude taxonomies, like all categories but not a specific one, right?
