you can exclude pages (while using a list of page id) from encoding at the settings page.
Other Solution: You need to encode all email while using shortcode and needs to disable the whole encoding function.

The encoding while using this shortcode don’t make the mail clickable. If you like with click, use this:[eeb_mailto email="[email protected]" extra_attrs="target='_blank'" method="rot13" display="[email protected]"]
