You cannot add GTIN numbers to a WooCommerce product using the default WooCommerce plugin, you have to take help from a third-party product addons or WordPress plugin to add GTIN to WooCommerce products.

Researching on Google, I could see many third-party plugins, and you can try any one of them according to your requirements.
