I think that everytime I save the settings it creates new empty sorting options:

please update your version of mdocs to the latest version, this will resolve this issue.
it says I have the latest version installed.
what version is install?
also head back to the settings page and try saving again.
Version 3.9.19.
I saved the settings again and I got the same result.More empty fields and the settings remained unchanged.
Goto mDocs dashboard > Restore to Default > keep “Keep all files, post, and categories.” checked and press the Restore to Default.
This will keep your file structure and files but will restore all setting to factory defaults.
Once complete head back to setting and see if the problem is still there.
I’m experiencing the same issue – now have hundreds of blank columns as it duplicates them each time I try to save. Latest version of mDocs plugin and have done the “Restore to Default” (keeping files/posts/categories) and same result…

Ftp to the memphis-documents-library plugin folder and unzip the file and add the file to this directory:
/plugins/memphis-documents-library/plugins/
head back to WordPress and see if the issue is gone.
delete the file and test again.
