Set Fallback URL

Hi John

Great plugin, thanks a lot! One question though:

Is there a possibility to set a fallback URL if no redirection rule matches?

Example: Our site has a post category jobs, so the URL to an example job posting would be domain.url/jobs/senior-it-consultant/. If the position gets filled, we delete the post, but would like to redirect requests for the now deleted post to domain.url/jobs/. Is this somehow possible?
