We currently have PHP version 8.0.6, I haven’t thought it could be coming from this since WordPress and Woocomerce themselves say versions 7.4 or greater are strongly recommended.
I will try to update the php version and see if this might help.

We have tried switching back to php 7.4 the fatal error about memory still persist. Thank you for the suggestion anyway.

Let’s try a few more troubleshooting steps:
WC Version: 7.3.0
- Update WooCommerce: can you try updating WooCommerce to the latest available version (7.4.0) Here is a guide on how to update WooCommerce.
- Increase Values: can you please ask your host to update the below values as follows:
PHP Post Max Size: 128 MB
PHP Time Limit: 600
Max Upload Size: 128 MB
3. Optimize the Database: I can see in the System Status Report that the database is pretty big. Can you try optimizing the database and see if this makes any difference? You can use a plugin for this, such as WP Optimize.
Please ensure that you have a good backup of your full site and database in place before doing the above suggestions, so that, should something go wrong, you are able to easily restore your site to a functioning state.
