The PHP version is not a problem, the minimum required is 7.1, but something is wrong there.
Can you show us the Invoice error in a screenshot? You can host it here.

Thank you for the answer.
I tried many different things yesterday.
Using older version of the plugin.
Removing all templates I found (there were non in my theme folder).
etc.
Here is the error message instead of the invoice:
