Fatal Error : mb_regex_encoding()

Hello, I’m trying to install Simply Static on a website that is using “Tatsu” as page builder and Oshin as theme but it doesn’t work. I have a fatal error :

I activated MBSTRING on my PHP local server (MAMP with PHP 7.4.1) but I don’t think the problem come from this. WordPress core and all plugins are up-to-date.
