We’re actively looking at a pop-out video option.
However, your suggestion may not be exactly workable – we do not know the resolution of the provided video and hence could not provide the pop-out to that size. Instead it would have to be a set size defined within the profiles.

OK, so I could specify a 720p pop out as the default, and then apply a 1080p one to videos of that resolution?
That would work fine. In fact, it would be brilliant.
One last thing I would add is that ideally the pop out button needs to be visible on the player before the user has clicked the Play button – or in fact, perhaps the pop out button should be right next to the Play button.
We’re not able to add additional buttons are we use the standard YouTube player. The plan was to allow the user to specify a link that would then launch the video in a pop-out windows – e.g. show a thumbnail of the video.

Well, if that’s the only way, can I ask that you allow us to have YouTube Embed do the heavy lifting by offering the option of a link beneath the embedded video. Something like “Click for full resolution pop-out” – or in fact, a text of our own choosing which links to the pop-out version of the video embedded directly above.
Yes, that sounds similar to what we wanted to do anyway.

Yes, we’ve been looking at this.
We’re due to publish a minor bug release hopefully this week. Then we have (already coded but awaiting a further change) the next major release. The plan is, hopefully, to have this feature in the major release after that (probably version 3.3).
