What you have done should be enough to replace the stock photo with your own. have you clicked on “Update” after completion?
Also, try to empty your browser cache or try from a different browser. Don’t forget to empty/purge any WordPress cache you might have?
If everything fails, you can disable demo content by going to Customize -> General Settings then disable Show Example Content? option.

Hi: Thanks so much for your help. That did the trick. However now I am having difficulty sizing my photos – they are too big – can you help with that?

Regarding your photos, the recommended size for Kale is 1200x800px.
