I just checked and there still an option to change button color. On “Appearance” page of form configuration in “Colors” section switch to “Custom” and expand the “File Upload” element.
Then there should be “Single Upload” option or “Multiple Files Uploader” – depending on whether you upload filed is set to single or multiple uploads.
That said, I’m not quite sure actually if you are not seeing such options there at all or you do but the issue is that changes made there are not applied to the form?
If it’s the latter then have you tried to clear all caches on site/server and/or check the form in browser’s incognito mode?
Would you share a link to the page that contains form in question?

Yes, I cleared cache, but still only see the upload file delete button option not the file upload button itself. It’s odd.

Got it figured out! I had imported all fields from CF7. So that upload field I ended up just replacing. All good now.
