1. Is it possible to search on the categories without having to input text into the search field? I have gone through the settings and changed the minimum number of characters to search on to zero, but it hasn’t made a difference.

2. Also, my search button text is just a square. Not sure why that is?

3. Custom fields – is it possible to have drop down boxes on these?

2. This is tampered by the theme. Try to repair it with custom css.

3. No. please read this about using keywords and this about custom data
You can limit the displaysize of the description (and make it scrollable) with custom css:
