with the subscribe2 plug in is it possible for me to set out a subscription page where users can select the post or filter content that is emailed to them from my site?

@kenneth,

Subscribe2 does not allow category based subscriptions for Public Subscribers (those that supply only their email address using the plugin form).

If you only accept Registered Subscribers you can allow category selections on a front page of you site with an extension plugin to Subscribe2 from Theme Tailors:
