Filter/Option for setting post date formats

It would be nice if the theme had a way of setting an option or filter that defined the formatting of dates in the posts top bars (for links, etc) and the sides of posts. By default it’s month/day/year, but I prefer it in the UK format of day/month/year. Alternatively, some way of making it honour the format selected within the wordpress general settings by default would be cool.
