Force carrier

Hi, so my customers get mails that include carrier and tracking info. But it seems like it switches between the carriers YunExpress and DAO. All of my orders can be tracked via DAO, so there is no need for the YunExpress to be on some of the orders. I can change the carrier manually on the order in woocommerce, but I would like to force the carrier to be DAO.
How do I do this?
