With this I have the Text Box set to validate a unique email and I was thinking that would force email logins only but Ultimate Member still with this filter set to email only allows login in via username as well, what am I doing wrong here?

If you want users to login via email just add the username or email field to login form then edit the label to say only email. That should work.
