Replace the_excerpt with the_content in the category.php or archive.php – depending what is used by your theme to display category archives.

Then get a normal theme. Yours is done by one of those idiot designers that that screw up the customization by using the same Loop in every template file – by calling it from the loop.php file.
Another option: delete this line:
<?php include (TEMPLATEPATH . '/loop.php'); ?> and put instead the content of the loop.php… and then proceed with the suggested changes.
