I think you are referring to the GDPR checkbox on a form? If so, to edit the text associated with checkbox:

1. Click the Settings icon on the Checkbox field. The settings sidebar will open.
2. Click the Checkboxes tab.
3. Edit the checkbox label.
4. Click Save & Close.
5. Click Publish if the form is live.
