GiftAid is not a core feature of the plugin yet. But you can set a a variable product like this: https://wcdp.jonh.eu/checkout/?postid=5370
Or you use a plugin like Flexible Checkout Fields for WooCommerce to add a GiftAid checkbox to your checkout.
