While it is not possible to only get the totals raised for this year in the shortcode, you might be able to find some success in either only including the forms that you made this year or deleting the donations from previous years.

When it comes to displaying the number of donations received, while it is not possible with the Give Totals Shortcode, you can use the Multi-Form Goal Shortcode. This displays the total number of donations with other details, but you can just hide them using CSS.
