Yes, I am already using Google Analytics, and I have installed a Goal for the contact form already with the Contact Form 7 plugin following this guide: https://contactform7.com/tracking-form-submissions-with-google-analytics/
Is there a similar script to set up the Submit event for Easy appointments? Or should I install it through Google Tag Manager?

new version is up with tracking feature. It’s the same as on that link just event name is different easyappnewappointment .
Regarding responsive design you should use bootstrap version of shortcode.
