I am doing this at the moment with the help of ChatGPT (i know, but it’s helpful) and I am getting this message.
wpmailsmtp.com has not completed the Google verification process. The app is currently being tested and can only be accessed by developer-approved testers. If you think you should have access, contact the developer.

Thank you for the additional details! The error you’re encountering typically indicates that your app is set to Testing mode. To resolve it, you’ll have to publish your app as shown in the Google mailer setup guide.
In case you haven’t done this already, within your Google Console (https://console.cloud.google.com/apis) project, please head over to the OAuth Consent screen section and then click Make External to publish your app.

Back in your WordPress admin area, you’ll need to connect to your Google account again by heading over to WP Mail SMTP > Settings and clicking on the button labeled Allow plugin to send emails using your Google account (https://a.supportally.com/FCADBa).

This was indeed the issue. You link provided much better help that CHATgpt could. I was just going around in circles.
The only thing I had to do after this was enable the API and all seems grand now.
