Themes should fill in the H1 tag for you based on the page’s title set in the WordPress content editor. The SEO Framework has no options to adjust this.
“Meta Title Additions” is your blog name. We should consider renaming that to make it easier to understand 🙂

That’s up to you. I recommend keeping the homepage’s Meta Title as your brand name only. The additions there are supplementary, and that may be the site’s tagline or slogan, helping visitors with brand recognition.
