I would like to create articles and pages reserved for a specific category of people.
I would like to know if it is possible to hide from the others the whole article or the whole page with the title. What I managed to do is make only the content of an article, private.

Yes. Select “hidden” from the post restriction options, or from the bulk actions in the All Posts (or pages) screen.

I read what you suggested but can’t find
in the upper right corner of the Post and Page editor windows, the WP-Members meta-box where you can select “hidden”.
Why?

I managed to hide a message from unregistered users, is it possible to hide the article from all registered users except for a specific role?
