It seems you’d like to hide Shipping on checkout, and only display Local Pickup. Correct?
While there is no built-in option within WooCommerce core that allows hiding the Shipping method, you can use the Conditional Shipping and Payments extension to set up shipping rules based on specific conditions.
Woo.com offers a 30-day refund policy which you can take advantage of, allowing you to test the plugin, and make sure that it works the way you need.

Hi @jellebuelens – just to add here, if you’re using the Checkout Block on your checkout page, then you’ll find a new(ish) sub-tab item under WooCommerce > Settings > Shipping > Local Pickup, from where you can configure a pickup option.
