If you want to hide/remove a vendor from the store listing page the default way right now is to disabling the vendor’s selling ability by navigating to your site’s WordPress admin panel’s Dokan > Vendors section as shown in this screenshot.
After you disable a vendor from selling, that will no longer appear on the store list page. Once the vendor is done completing his/her store, s/he will let you know and you will be able to enable the selling ability to make the store visible on the store list page.

Is there a way to let each vendor doing this by themselves please?
So basically he can show his store once ready, to prevent empty store!

Right now this feature is unavailable to let the vendors enable/disable their own selling ability. If you want to show only the stores that have products then you can use [dokan-stores with_products_only='yes'] this shortcode instead of [dokan-stores].
