It depends on what you want to delete.
If you want to delete all data and settings, go in the EME settings interface, tab “General” and check the option “Delete all EME data when upgrading or deactivating”. Then deactivate and reactivate.
If you just want to remove test events, people, etc … then delete all content from wp_eme_* tables. You can even leave some tables untouched (for examples if you want to keep templates you created, or event categories, the names of the relevant tables are pretty straightforward). I’ve been meaning to include an option to just delete EME data (not settings), but just always seem to forget this … I’ll change that for the next version 🙂

One question, if we choose to “delete all EME data when upgrading or deactivating”, would that also reset any changes we made in the settings as well? For example, would changes we made in settings under the different tabs like the “Access” tab or the “RSVP” tab also be deleted/reset?

Yes, that’s why in the next version you’ll be able to choose what you want (even added extra cleanup options, so no deactivation/reactivation is needed).
If you want, you can take the current dev version and try that one out.
