Hi, I’m working on setting up my website, but I cannot find a way to remove the meta data at the top of the book page (date, author, and comments). Any insight on how to fix this?

That information comes from your theme. You will need to see if your theme offers any options to hide that, or you’ll need to use custom CSS to hide it on book pages.
