no advice from me (it would seem biased 😉 ), but why not test both and see which one works best in your specific context (site, theme, plugins, configuration ..)? 🙂

EWWW + its ‘CDN subsription’ focus only on images correct?
So to optimize the entire website you’d still need Autoptimize.
So what does the combo ‘Autoptimize + Shortpixel’ do, that the combo ‘EWWW + CDN’ doesn’t?

well, they indeed both serve optimized images over a CDN indeed. AO does CSS & JS & HTML optimization as well, which as far as I now EWWW indeed does not do. On the other hand EWWW seems to also do PDF’s, which AO blissfully ignores 🙂

What I’m curious about is AO is comprehensive optimization system right, so does adding images to it have an overall/reinforcing effect on your website speed, or are website optimizition and image CDN just two completely different processes? (Probably explaining it incorrectly, but I hope you understand what I mean).
well, not 100% sure how EWWW does it, but while optimizing CSS AO will also look for images in there and ensure they are optimized & put on the CDN too.

EWWW only does library media if I’m not mistaking, and AO ‘all frontend imagery’?

EWWW in the normal setup will indeed optimize your entire media library (but I think it also acts on images in theme/ plugins). Not sure how different it acts in CDN mode though.
Disadvantage of the AO approach; if you have an image on a page which links to the image itself (in higher resolution), the image in the page (in an <img tag in the HTML or a CSS background-image) is optimized, but the linked high-res image will not be optimized (as it’s not referenced in the HTML, it’s standalone).
