If you don’t have GTIN added to your items in GMC then you must haven’t mapped the correct attribute while configuring the feed. Please, check the feed if it contains the GTIN values. If not, map with the correct GTIN custom field meta enabled by RankMath.
For the shipping issue, you must have configured the feed as shown here – https://prnt.sc/OXs0d8JdVBMM also make sure the feed contains the shipping values similar to this example.

But I think it is mapped correctly. Please see that feed contains GTIN values screenshot1 and it is mapped with the correct GTIN custom field meta enabled by RankMath screenshot2
As you can see screenshot3 GTIN is already added. But it is automatically checked on “I don’t have GTIN”
