Sorry for the trouble here! That information should definitely be saving when publishing or updating an event.
First off: are you using a multilingual plugin by chance? I’ve seen a similar issue pop up in the past and it was related to a conflict, specifically with WPML.
Next, I would suggest following these troubleshooting steps. There could be a conflict with your theme or another plugin that is preventing the information from being saved.
Lets’ start there and see what we find.

Thanks for coming back. My client on this project has held back the events section for launch on this site so I have not been able to tackle this.
Having used the events calendar without issue several times I suspect it is a theme conflict.
