I suspect it is your theme doing this. I tested embedding one of your Instagram posts on my test site, and our embed feature worked as anticipated. You can see a screenshot here.
If it doesn’t turn out to be your theme, you might consider deactivating all of your plugins (except Jetpack) and see if the embeds show at full size. If they do, activate each plugin one at a time and see which one of them makes the embeds display cropped.
Let us know what you find.
Is there any way I can override the theme so it wont affect those posts? (Im not too tech-savvy)

You can try temporarily switch your theme to Twenty Sixteen and see if the problem persists. You’re welcome to use the Theme Switcha plugin to do that:

This plugin lets you change themes without it affecting the way users see your site.
If you see that the Instagram embed works again, then it’s indeed your theme that clashes with it.
In case nothing changes, then we can rule out the theme as the root of the problem, and check if it’s a plugin conflict.
As Jen suggested, try temporarily deactivate all your plugins and check if the problem gets fixes that way. If it works, then reactivate each plugin one-by-one to find out which one is causing problems.

@erania-pinnera That is an awesome little plugin! So yes, its my theme causing the issue. Now I just need to find the code. Any hints on what I might be looking for?
