Yes, but the original image is still stored in the upload directory and is appended with -unsmushed at the end. So anyone can easily download all your unsmushed images by simply adding that to the end of your smushed image urls.

The reSmush.it API provides an optimization which remove EXIF Data by default. However, the API provides a way to keep them.
Currently, this feature isn’t yet provided on the WP Plugin but will be soon available.
Another way to gather this information, as said bwbama, is to retrieve these data from the original picture (-unsmushed file).
