have you tried directly changing string from option in admin panel?
You can find “Add to wishlist text” option under YIT Plugin -> Wishlist -> Settings (here a screen)

yes there it says ‘Zu Wunschliste hinzufügen’ which would be right, but at the frontend it is english again

Cna you check if your theme overwrites templates add-to-wishlist.php or add-to-wishlist-button.php?
Otherwise, can you try it with default Twenty WordPress theme?

Glad to know we found the problem! Maybe theme developer can help you better, but I suggest you to search for untranslated strings in add-to-wishlist.php or add-to-wishlist-button.php templates, if they are overwritten in theme root, or under /woocommerce subdirectory 🙂
