I understand that after updating WooCommerce to v6.5.1 the analytics changed from Persian to English.
As a general information, you can use a translation plugin like Loco Translate or Say What to change any text language on your site.

However, in this case, since you are using the Persian WooCommerce extension, we recommend that you open a support request in the plugin’s dedicated support channel at https://ww.wp.xz.cn/support/plugin/persian-woocommerce/

it seems that after the update the “woocommerce-xx_XX-wc-admin-app.json” file with the translation in the “/wp-content/languages/plugins/” path is deleted and is no longer regenerated.
Could it be related to this change (https://github.com/woocommerce/woocommerce/pull/32603) ?

That is possible, but it needs to checked by the Persian WooCommerce developers. When enhancing the plugin’s compatibility with the latest WooCommerce version, they will likely find this pointer helpful.

Is there a “woocommerce-fa_IR-wc-admin-app.json” file in your WordPress installation at “/wp-content/languages/plugins/”? If not, could you get it from a pre-update installation and place it there? At least this way you get most of the translation until the next update.
