I think it is because the French translation of FooGallery is only 19% complete.
The translations are done by the community here :https://translate.ww.wp.xz.cn/projects/wp-plugins/foogallery
And I can see for French that there are 87 strings awaiting approval.
Perhaps you can contribute to the translation and help it along?

Now I understand better why I see a mixture of English/French
However I think your misunderstood me, Bradvin.
English being set as my language on my profile page, anything on the backend should be displayed in English, although my site is set in French (in General Settings).
It seems that for its setting pages, your plugin mistakingly takes the site language into account instead of taking the user’s profile language into account.
Here it’s not too bad for me since I know both languages but let’s say I build a site in Russian for a friend. I’d really need anything on the backend to show in English since I don’t know one word of Russian.
Having said that, I’d be happy to contribute to the FooGallery French translation. When I have a bit of time (not just now), I’ll have a look at the link you provided and I’ll try to contribute.

I am not sure why the language is not being picked up correctly.
We code everything on our settings page in the standard WP way for languages to be used correctly.
If you manage to translate the plugin, please get in touch and I will happily give you a FooGallery PRO license for your help

I just noticed that the same issue occurs with another plugin I just installed: Smart Slider. But in their general settings, there is an option “Force English on dashboard” and it works.
Don’t know if it could help you solve the issue but I thought I’d tell you anyway.
