In order to achieve your desired result please follow the below-mentioned steps.

Firstly, you can go to the Quizzes > particular quiz > Settings tab > Group questions by category option.

Then, tick the Enable question bank option and the By Category suboption as well.
Here you can see all the categories of questions you have included in the general tab. You can provide different numbers for different categories.
Also, you can reorder them as you want by drag and dropping. The category order will be kept in the front end, but questions will be printed randomly.
