Upon checking the documentation of the functional specification of the sitemaps, it should populate and add the lastmod date when applicable.
Could you please provide us with the link to your sitemap URL as well as which specific URL of the post or page isn’t populating with the last modified date so we can try and check on this further?

Upon checking the /post-sitemap1.xml, we do see it is missing the lastmod date in the sitemap index, but when viewing the specific sitemap, all the posts have valid dates.
According to our documentation:
(Optional) The lastmod property should reflect the most recent lastmod value from within the XML sitemap in question
So we would expect that the most recent lastmod value from within the post sitemap 1 of (2021-05-27 10:11 +00:00) would reflect. However, this doesn’t seem to be the case.
You might want to perform a conflict check just to rule out any possible plugin or theme conflicts, but this shouldn’t necessarily be a cause for concern as the ‘lastmod’ property is an optional value and shouldn’t affect the search engines from crawling your sitemaps.
