We do have an extension called FooGallery Migrate that can be used to migrate galleries from other gallery plugins to FooGallery. However, for now, the extension does not have the option to migrate a default WordPress gallery to FooGallery.
With that said, I will forward this as a feature request so that we can work on adding this option too.
For now, an option you can consider, apart from manually creating the galleries in FooGallery, is modifying one of the existing files in the FooGallery Migrate plugin under includes/plugins that are used to migrate the galleries from other plugins to FooGallery and tweaking it to migrate the default WordPress galleries to FooGallery. At the end of the day, a gallery is simply a post with some metadata and so it is possible to tweak one of the files to import those galleries instead.
