Moderate specific forms?

Do you want to moderate forms or the posts that are submitted through forms?

If you want to moderate the posts that are being submitted through forms, then you need to set post status pending or draft. When users submits post using that form, the post status will be set according to your form settings.

To set post status, add or edit a form and navigate to settings tab and change the post status.

Yes. The admin will be notified after each new post that have been saved as pending or draft. Just enable the checkbox by navigating here: User Frontend > Post Forms > Notification tab, enable post notification and set the admin email address.
