Multiple Addresses; multiple categories

It is so successful that we have been asked to set up the same for Wednesday Meetings. Is there a way to configure one instance, or run multiple instances, of Postie so that a registered user sending a mail to, for example, [email protected] will create a category ‘Sunday’ post, while sending to [email protected] would create a post of category ‘Wednesday’?
