Yes, you can use a different paypal account for each of the payment widget you create with the shortcode. Check the following documentation:

Hi again,

I was wondering if it was possible to dinamically set the paypal account (email parameter), for exaple taking it from a textbox somewhere on a page.

No, it can’t do that at the moment.
