I thought when I’ve used this plugin before I was able to assign multiple UM roles per user using a multi select pull down, but the pulldown is a single select.

It’s always a single role. You can try this plugin to allow you to add multiple roles to a user: https://ww.wp.xz.cn/plugins/user-role-editor/
