Multisite: how do I restrict the Admin sidebar?

I am using multisite for a franchise.
All the sites need to look more or less the same, I need to restrict the sidebar in the admin to only allow the franchises to use posts, pages, media, comments and possibly a calendar if I can find one I like.

Is there a plugin or away to do that and still be able to setup specific themes and plugins from the Super Admin main site?
