You can change the gallery path by navigating to the Gallery option available under Network admin area as shown in the screenshot here.
The gallery path cannot be changed for individual sites and needs to be managed under Network admin area.

As you can see from my screenshot I tried to change the Path under Network admin area but then in a new multisite site I don’t see the folders (see second screenshot) when I try to Scan for images.
I would like to share the same gallery between multiple sites in a multisite installation

Sorry for the delayed response,
In a WordPress Multisite, you can’t upload images from a folder or another site’s media library because each site has its own separate media library and file structure. WordPress does not allow cross-site media sharing by default.
Since you’ll not be able to upload the images from folder and media library you’ll need to upload image manually on each subdomain you’ll be creating for different sites.

Thank you for reaching back,
The option is actually for the users using the NextGEN Gallery on a single site and not on the multisite. NextGEN Gallery doesn’t automatically remove the option if used on the Multisite, so it still appears when used in Multisite.
