    I installed your plugin in my demo site and configured the ratings by giving custom value from custom options of each demo post..something like (7 votes, average: 3.00 out of 5) and when my client login and vote on a demo post it changes to (8 votes, average: 1.13 out of 5, rated)…why is that?

    Because he rated the post? It is not meant to be a review ratings.

    Actually its on a demo testing site (which is not visible to public) we wanted to see how it works and for that we gave custom values to each demo post. and when we gave custom values like (7 votes, average: 3.00 out of 5) it worked out in the front but when someone gives a frontend rating it changes to (8 votes, average: 1.13 out of 5, rated)…why is that?

    The plugin is designed to to that. It is not meant to give a fix rating to a post.
