Need help picking theme (moving from simfo)

My site is currently on wordpress.com and I need to move it to ww.wp.xz.cn– when I make the move, I’d like to change my theme to something that gives me more options than my current theme, simfo.

I think the grid design encourages readers to read other blog entries, so I was going to stick with that, unless anyone has suggestions about what else might work.

What I’d like to do is have category pages look like the landing page– so if a user wants to check out italy souvenirs, they could select it from the drop down, then hit a page that looks like my landing page- except just italy entries. Simfo can’t do that, all you get are all the blog entries– and I plan to have more than 50 entries for some countries, so it seems very cumbersome to have users scroll through them all instead of seeing them quickly portfolio style.

Thanks for any thoughts at all! p.s. I am an absolute beginner with anything tech so it must be easy enough for me to handle, I am definitely willing to pay for a theme (and assistance to move it). Thanks!
